- 3 large sweet potatoes, scrubbed
- 1/4 to 1/2 cup lowfat chicken broth
- Salt and freshly ground black pepper
Directions

1Preheat the oven to 350 degrees F.

2Prick the potatoes with the tines of a fork and place in a baking dish.

3Roast until the potatoes are tender, about 45 minutes.

4Remove from the oven.

5When cool enough to handle, peel off the skin and place the flesh in a bowl.

6Mash with a hand masher.

7Add enough chicken broth to achieve desired consistency.

8Season with salt and pepper.

9Be careful adding salt as many chicken broths contain lots of salt already.
