Onion Soup

Ingredients

  • 1 tbsp vegetable oil
  • 2 lb onions, peeled, cut into quarters and thinly sliced
  • 1 clove garlic, peeled and finely chopped
  • 4 sprigs thyme
  • 1 pinch cayenne pepper
  • 4 cups vegetable stock
  • 1/2 cup dry white wine
  • 4 slices thick white bread
  • 2 oz reduced fat cheese, grated

Directions

    Heat the oil in a large pan. Add the onion, garlic and thyme leaves and saute over a medium heat for about 10 minutes to soften the onion. Sprinkle in the cayenne.

    Pour in the stock, bring to a boil, cover and simmer for 20 minutes. Preheat the oven to 400°F.

    Stir the wine into the soup and season with salt, pepper and a pinch of sugar. Ladle into 4 ovenproof soup bowls. Add a slice of bread to each bowl and sprinkle the cheese on top. Bake for 8-10 minutes. Serve hot.
