  • 1/3 baguette cut into cubes
  • 4 tablespoons oil
  • 4 strips bacon
  • 2 spanish onions peeled and cut into thin strips
  • 1/2 teaspoon sugar
  • 4 1/4 cups vegetable stock
  • 1 teaspoon dried thyme
  • paprika to taste
  • 1 ounce gruyere grated
  • fresh thyme for garnish

Directions

    Preheat the oven to 400°F. Place the bread on a baking sheet and drizzle with 2 tbsp oil. Bake for 8 mins, until golden brown.

    Heat a frying pan and fry the bacon until crispy. Remove from the pan and drain on paper towels.

    Heat 2 tbsp oil in a large saucepan and saute the onions over medium heat for 3 mins. Sprinkle with the sugar and season to taste. Add the stock and dried thyme, bring to a boil and simmer for 10 mins. Add paprika and season to taste.

    Preheat the broiler. Ladle the soup into 4 broiler-safe bowls. Lay the bread slices on top and sprinkle with the cheese. Broil for 3-4 mins, until the cheese is golden and melted. Top with the bacon and garnish with fresh thyme.
