Onion Soup

Ingredients

  • 4 large onions
  • 2 Tbsp. butter
  • 4 c. rich beef stock or 1 1/2 cans bouillon
  • 1 tsp. salt
  • 4 slices hot buttered French bread, toasted
  • 1/4 c. grated Parmesan cheese

Directions

    Slice onions very thin.

    Saute in butter until light brown. Heat stock (if using bouillon, add an equal amount of water).

    Add to onions and simmer for 20 minutes.

    Add salt.

    Place toast slice in individual serving dishes.

    Add soup and sprinkle with the grated Parmesan cheese.

    Serve immediately.
