- 4 large onions
- 2 Tbsp. butter
- 4 c. rich beef stock or 1 1/2 cans bouillon
- 1 tsp. salt
- 4 slices hot buttered French bread, toasted
- 1/4 c. grated Parmesan cheese
Directions

1Slice onions very thin.

2Saute in butter until light brown. Heat stock (if using bouillon, add an equal amount of water).

3Add to onions and simmer for 20 minutes.

4Add salt.

5Place toast slice in individual serving dishes.

6Add soup and sprinkle with the grated Parmesan cheese.

7Serve immediately.

8Yields 4 servings.
