Ingredients
- 4 to 5 large Bermuda onions
- 1/4 lb. butter
- 1/2 tsp. sugar
- beef stock (about 5 c.)
- 1/2 c. dry wine
- 3/4 lb. Gruyere cheese, grated
Directions

1Saute onions (4-quart pot full) in butter and sugar, stirring constantly until brown (30 minutes or so).

2Add beef stock, wine, salt and pepper to taste.

3Simmer 20 to 30 minutes.

4Pour over toasted croutons and grated Gruyere cheese.

5Bake in a 350° oven until bubbly and brown.

6Use Swiss if Gruyere is unavailable.
