Onion Soup

Ingredients

  • 3 medium Spanish onions, sliced into rings (about 6 c.)
  • 1/4 c. margarine
  • 2 Tbsp. flour
  • 2 cans (15 oz. size) beef broth
  • 2 1/2 c. water
  • 6 slices French bread
  • 1/2 c. Parmesan cheese
  • 1/2 c. grated cheese (Swiss, Mozzarella, etc.)

Directions

    Saute onions 20 minutes.

    Stir in flour.

    Add broth and water gradually.

    Simmer 20 minutes.

    Toast bread.

    Put bread in baking dish.

    Ladle in soup.

    Sprinkle with cheese.

    Bake at 425° for 10 minutes.
