Onion Soup with Pancetta

  • 100 grams Homemade pancetta
  • 2 Onions
  • 800 ml Water
  • 2 Chicken stock cubes
  • 80 ml Sake
  • 1 Salt

Directions

    Dice the homemade pancetta into 7 mm cubes.

    Saute until the fat melts into grease, which you can discard.

    Chop the onion into 7 mm rounds, and break them up as you add them to the pan.

    Saute everything together over medium heat.

    Once the onions are cooked until the edges become translucent, pour in the water and sake.

    Break in the chicken stock cubes.

    Cover the pan and let it simmer.

    Taste, and season with salt.
