  • 2 medium Maui onions, sliced
  • 1 Tbsp. olive oil
  • 1 each small green and red pepper, cut into thin strips
  • 2 large tomatoes, cut into thin wedges
  • 3 cloves garlic, minced
  • 2 lb. opakapaka or marlin
  • 1 (8 oz.) pkg. Feta cheese, crumbled
  • 1 Tbsp. chopped fresh parsley

    Heat oven to 375°.

    Cook and stir onions and peppers in oil in large skillet on medium-high for 5 minutes or until tender, but crisp.

    Add tomatoes and garlic; mix lightly.
