- 2 medium Maui onions, sliced
- 1 Tbsp. olive oil
- 1 each small green and red pepper, cut into thin strips
- 2 large tomatoes, cut into thin wedges
- 3 cloves garlic, minced
- 2 lb. opakapaka or marlin
- 1 (8 oz.) pkg. Feta cheese, crumbled
- 1 Tbsp. chopped fresh parsley
Directions

1Heat oven to 375°.

2Cook and stir onions and peppers in oil in large skillet on medium-high for 5 minutes or until tender, but crisp.

3Add tomatoes and garlic; mix lightly.
