  • 1 (6 oz.) can frozen orange juice concentrate
  • 1 Tbsp. grated orange rind
  • 2 Tbsp. reduced sodium soy sauce
  • 1 Tbsp. minced onion
  • 1/4 c. chopped parsley or 1 tsp. dried parsley
  • 1 clove garlic, minced
  • 1/4 tsp. pepper
  • 1 chicken, cut in pieces and skinned

Directions

    Preheat oven to 400°.

    Combine all ingredients except chicken. Place chicken in a 9 x 13-inch pan.

    Pour marinade over chicken. Cover pan and bake for 45 minutes.

    Uncover and continue baking until tender.

    Baste several times with sauce.

    Thicken remaining sauce in pan until consistency of gravy and spoon over chicken before serving.
