  • 1 None orange
  • 1/4 cup blanched almonds, toasted
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 3 None large eggs
  • 1/2 tsp vanilla extract
  • 1 cup ground almonds
  • 1 tbsp all purpose flour
  • None None powdered sugar, for dusting

Directions

    Place unpeeled orange in medium saucepan. Cover with cold water, bring to a boil. Boil, covered, for 50-60 mins, until tender. Drain. Cool.

    Preheat oven to 350°F. Lightly grease an 8 x 12 inch baking pan. Line base and sides with baking paper, extending paper 1 inch above edges.

    Place toasted almonds and 2 tbsp sugar in a food processor or blender. Process until finely chopped.

    Trim ends from orange and discard. Halve orange. Remove and discard seeds. Place orange with rind, baking powder and cinnamon into a food processor. Process until mixture is pulpy.

    In a small bowl, using an electric mixer, beat eggs, remaining sugar and vanilla for 3-4 mins, until mixture is light and fluffy. Fold in almond mixture, orange pulp and combined ground almonds and flour. Pour into prepared pan, smoothing top.

    Bake for 35-40 mins, until a skewer comes out clean. Cool in pan. Cut into squares and dust with powdered sugar.
