  • 1 tablespoon oil
  • 1 lb top round beef, cut into 1/2-inch cubes
  • 1 small onion, diced
  • 2 garlic cloves, sliced
  • 12 lb sliced mushrooms
  • 1 cup shredded carrot
  • 1 (6 ounce) packagewild-and-white rice pilaf mix
  • 1 cup orange juice
  • 1 cup beef broth

    Briefly heat oil in large, deep pot over medium-high heat.

    Add beef and onion.

    Cook, stirring frequently, for 5 minutes.

    Add garlic, mushrooms and carrots.

    Cook another 5 minutes.

    Add pilaf mix, orange juice and beef broth; bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until liquid has been absorbed.
