- 1 c. raisins
- rind from 1 orange
- 1 c. buttermilk
- 2 c. flour
- 1/2 c. shortening
- 1 c. plus 1/2 c. sugar
- 1 tsp. baking soda
- dash of salt
- 2 eggs
- juice from 1 orange
Directions

1In food processor, grind raisins and orange rind.

2Mix with buttermilk.

3In separate bowl, combine flour, baking soda, shortening and salt.

4Combine dry ingredients with fruit and milk mixture and beat 1 1/2 minutes with electric mixer.

5Add eggs and beat another 1 1/2 minutes.

6Pour into large greased pan and bake at 300° for 1 hour or until tester comes out clean.
