  • 1 c. raisins
  • rind from 1 orange
  • 1 c. buttermilk
  • 2 c. flour
  • 1/2 c. shortening
  • 1 c. plus 1/2 c. sugar
  • 1 tsp. baking soda
  • dash of salt
  • 2 eggs
  • juice from 1 orange

Directions

    In food processor, grind raisins and orange rind.

    Mix with buttermilk.

    In separate bowl, combine flour, baking soda, shortening and salt.

    Combine dry ingredients with fruit and milk mixture and beat 1 1/2 minutes with electric mixer.

    Add eggs and beat another 1 1/2 minutes.

    Pour into large greased pan and bake at 300° for 1 hour or until tester comes out clean.
