  • 1 Chicken Breast
  • 1 Shallot
  • 3 clove Garlic
  • 1/4 cup Red Bell Pepper or Roasted Red Pepper or and Sweet Peppers
  • 2 Fresh Squeezed Orange (Juice)
  • 1 cup Spinach
  • 2 pinch Fresh Parsley

Directions

    Season chicken with salt and pepper.

    Add v.oil to saute pan and turn on medium heat.

    Saute the chicken for about 5 minutes.

    (Chicken should not be fully cooked).

    Remove and sit aside.

    Add shallots and red bell peppers to pan and saute for a minute.

    Deglaze the pan with fresh squeezed orange juice and reduce down for about 2-3 minutes

    At spinach and parley.

    Allow the spinach to shrink.

    Add salt and pepper to taste and serve immediately.
