- 3/4 cup low-sodium chicken stock
- 3/4 cup freshly squeezed orange juice (about 2 large oranges)
- 1 1/2 teaspoons grated zest
- 6 tablespoons distilled white vinegar
- 1/4 cup soy sauce
- 1/2 cup packed dark brown sugar
- 3 medium garlic cloves, minced (about 1 tablespoon)
- 1 piece fresh ginger (about 1 inch), grated (1 tablespoon)
- 1/4 teaspoon cayenne pepper
- 1 tablespoon cornstarch, plus 2 teaspoons
- 2 tablespoons cold water
- For Coating and Frying
- 3 large egg whites
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- 1/2 cup canola oil

Transfer 3\/4 cup of the mixture to a gallon-sized resealable plastic bag. Add the chicken to the bag then seal and refrigerate for 30-60 minutes, but not longer.","2":"Heat the remaining sauce in the pan over medium-high heat until it comes to a boil. Meanwhile, combine the cornstarch and water in a small bowl, mixing to dissolve the cornstarch. Once the sauce reaches a boil, whisk in the cornstarch mixture. Simmer the sauce until thick and translucent, about 1 minute. Remove from the heat and set aside while you make the chicken.","4":"Preheat oven to 500 F. Grab two pie plates.
