- 2 tbsp. thinly sliced blood or navel orange zest (from 1/2 orange)
- 2 blood or navel oranges
- 13 c. sugar
- Coarse salt
- 2 tbsp. water
Directions

1In a medium saucepan, combine orange zest and slices, sugar, salt, and water; bring to a boil over high.

2Reduce heat to medium, and simmer, stirring occasionally, until oranges collapse and liquid is syrupy, 12 to 15 minutes.

3Cool compote to room temperature.

4Store in an airtight container in the refrigerator, up to 2 weeks.
