Orange Ginger Chicken

  • 4 boneless chicken breasts
  • 14 cup flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 teaspoons fresh ginger, minced
  • 2 tablespoons brown sugar
  • 1 teaspoon dry mustard
  • 2 cups fresh orange juice, from juicy sweet oranges
  • 2 teaspoons orange zest
  • 34 cup sliced green onion

Directions

    Season chicken and coat with a little flour.

    Melt butter and oil over medium heat.

    Saute chicken until brown for approximately 3 minutes per side.

    Put on a plate.

    Add ginger; stir 1 minute.

    Add brown sugar and mustard and stir to blend.

    Add juice and zest.

    Simmer until slightly reduced which takes about 5 minutes.

    Add chicken and simmer 3 minutes.

    Turn chicken and add onions and simmer a couple of minutes.

    Season again to taste.
