- 4 boneless chicken breasts
- 14 cup flour
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 teaspoons fresh ginger, minced
- 2 tablespoons brown sugar
- 1 teaspoon dry mustard
- 2 cups fresh orange juice, from juicy sweet oranges
- 2 teaspoons orange zest
- 34 cup sliced green onion
Directions

1Season chicken and coat with a little flour.

2Melt butter and oil over medium heat.

3Saute chicken until brown for approximately 3 minutes per side.

4Put on a plate.

5Add ginger; stir 1 minute.

6Add brown sugar and mustard and stir to blend.

7Add juice and zest.

8Simmer until slightly reduced which takes about 5 minutes.

9Add chicken and simmer 3 minutes.

10Turn chicken and add onions and simmer a couple of minutes.

11Season again to taste.
