- 1 cup sugar
- 1/2 cup margarine
- 2 eggs
- 2 cups flour
- 3 teaspoons baking powder
- 1 teaspoon ground ginger
- 1/2 cup orange juice
- 1/2 cup milk
- 1 teaspoon orange rind, grated
- 1/2 cup walnuts, chopped
Directions

1Preheat oven to 180°C.

2Cream together sugar and margarine.

3Add eggs, beat till light and fluffy.

4Combine dry ingredients in another bowl.

5Mix together orange juice and milk.

6Add the orange juice mixture alternately with the dry ingredients to the batter, beating till blended.

7Fold in orange rind and walnuts.

8Bake in a loaf pan about for 45 minutes or until the cake is cooked when tested with a skewer.
