- 2 c. unbleached all-purpose flour
- 1/2 to 3/4 c. sugar
- 2 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 large or 2 small oranges
- 1/4 to 1/3 c. milk
- 1/3 c. butter, melted and cooled
- 1 large egg, beaten
- 1 tsp. vanilla
- 1/4 tsp. soda
- 1/2 c. pecans, coarsely chopped and lightly toasted
Directions

1Preheat oven to 400°.

2Spray 12 muffin cups with Pam, or line with paper liners.

3In a large mixing bowl, combine flour, sugar, baking powder and salt.

4Grate zest of orange and juice it.

5Add enough milk to orange juice to measure 1/2 cup, plus 2 tablespoons.

6Pour into a second bowl.

7Add butter, egg, vanilla and baking soda; whisk until blended.

8Add wet ingredients to dry; combine with as few strokes as possible.

9Fold in orange zest and pecans.

10Spoon into muffin cups.

11Bake for 15 to 20 minutes.

12May be glazed with orange juice, zest and sugar.
