- 2 1/2 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 c. orange juice
- 1/4 c. vegetable oil
- 1 c. softened unsalted butter
- 1 c. sugar
- 4 egg yolks and white, separated
- 1/4 c. orange marmalade
- 2 Tbsp. grated orange peel
Directions

1Sift flour, baking powder and salt; set aside.

2Combine 1/2 cup orange juice and 1/4 cup oil in 1-cup measuring glass.

3Beat unsalted butter and sugar in mixer.

4Beat egg yolks, warmed to room temperature, one at a time until light and fluffy.

5Beat in orange marmalade and orange peel.

6Add juice mixture alternately with dry ingredients until just blended.

7In clean mixer bowl, beat 4 egg whites at room temperature until stiff, then gently fold into batter.

8Spoon into prepared muffin pan and bake 20 minutes or until golden brown at 375°.

9Makes 2 dozen.
