- 2 c. sifted all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 egg
- 1/2 c. skim milk
- 3 tsp. liquid sweetener
- 2 Tbsp. melted butter or margarine
- 1/2 c. artificially sweetened orange fruit spread
- 1/4 c. chopped walnuts or pecans
Directions

1Preheat oven to 350°.

2Combine and sift dry ingredients.

3Beat egg.

4Add milk and sweetener.

5Add to flour mixture.

6Stir only until all flour is moistened, then gradually stir in melted butter or margarine.

7Fold in fruit spread and nuts, mixing as little as possible.

8Transfer to lightly greased loaf pan (9 x 5 x 3-inch). Bake for 1 hour and 40 minutes, or until loaf springs back when pressed lightly with finger.

9Cool before slicing.
