Orange-Pecan Bread

  • 1 egg, beaten
  • 1 c. orange juice
  • 1 c. raisins, cut fine
  • 1 Tbsp. grated orange rind
  • 2 Tbsp. shortening, melted and cooled
  • 1 tsp. vanilla
  • 2 c. sifted all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1 c. chopped pecans

Directions

    Combine egg, orange, raisins, rind, shortening and vanilla. Sift flour, baking powder, soda, salt and sugar into orange mixture; mix well.

    Stir in pecans.

    Pour into a well-greased 5 x 9 x 2 1/2-inch loaf pan.

    Bake at 325 to 350° for 1 hour, or longer (check with a toothpick at 1 hour).
