- 1 cup sugar
- 1 teaspoon cream of tartar
- 13 cup orange juice
- 2 14 cups pecan halves
- 12 teaspoon grated orange rind
Directions

1Combine sugar, cream of tartar, and orange juice in a saucepan.

2Cook over low heat, stirring gently until sugar dissolves.

3Cover orange mixture, and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan.

4Uncover and cook over medium heat to a soft ball stage (240F).

5Remove from heat, and beat with a wooden spoon just until mixture begins to thicken.

6stir in pecans and oranger ind.

7Working rapidly, drop by heaping teaspoonfuls onto waxed paper; let cool.
