Orange Pork Chops

- 1 teaspoon olive oil
- 8 boneless pork chops
- 8 ounces beef stock or broth
- 1 tablespoon apple cider vinegar or plain vinegar
- 1 tablespoon brown sugar dark or light
- 1 green bell pepper chopped
- 1/8 teaspoon orange zest
- 1 orange segmented large
- 1/2 cup orange juice
Directions

1In a skillet, drizzle olive oil and brown pork chops. Remove pork chops.

2Stir together beef both or stock, apple cider vinegar or vinegar, brown sugar, and 1/4 cup orange juice. Pour a little in the bottom of the skillet. Put chops and any juice back into the skillet.

3Add green bell pepper. Pour remaining stock mixture over pork chops in skillet. Cover and simmer on medium low for 30 minutes.

4Turn to low heat. Add orange zest and orange segments. Cover and simmer 15 more minutes.

5Remove lid. Add 1/4 cup more orange juice. Simmer uncovered on low heat an additional 5-10 minutes until sauce is desired consistency.
