  • 1/4 c. butter or margarine
  • 2/3 c. diced celery (with leaves)
  • 2 Tbsp. minced onion
  • 2 Tbsp. grated orange rind
  • 1 c. orange juice
  • 1 tsp. salt
  • 1 1/2 c. water
  • 1/8 tsp. dried thyme
  • 1 c. raw regular or processed white rice

Directions

    I prefer brown rice by Uncle Ben's.

    In hot oil or butter in saucepan, cook celery and onion until tender, but not brown.

    Add water, orange rind, juice, salt and thyme.

    Bring to boil slowly. Add rice.

    Cook covered over low heat 25 minutes or until tender.
