- 1 c. orange juice
- 1 c. liquid skim milk
- 1 c. converted rice
- 1/4 tsp. salt
- 1 (8 oz.) carton plain yogurt
- 2 Tbsp. sugar
- 2 navel oranges, peeled, seeded and diced
Directions

1Place juice and milk in a medium sized heavy saucepan and bring to a boil over moderately high heat.

2Mixture will curdle. Stir rice and salt into boiling milk mixture and when it returns to a boil, turn heat to low.

3Cover pan and cook 25 minutes or until rice is tender.

4Transfer cooked rice to a serving bowl. Cover and chill several hours.

5Place yogurt and sugar in a small mixing bowl and mix.

6Add to rice.

7Add diced oranges and stir gently to combine all ingredients.

8Makes 6 servings.
