  • 1/4 c. butter
  • 2 Tbsp. each: lemon juice, chopped parsley and snipped chives
  • 1 tsp. dill weed
  • 2 dashes (1/16 tsp.) cayenne pepper
  • 1 lb. orange roughy
  • salt

Directions

    Melt butter.

    Stir in lemon juice, parsley, chives, dill and cayenne pepper.

    Lay fish in single layer in 9-inch square pan. Pour batter mixture over fish.

    Bake uncovered at 400° for 8 to 10 minutes.

    Take out and keep warm.

    Boil juices over high heat until about 1/4 cup is left.

    Pour over fish.
