- 1/4 c. butter
- 2 Tbsp. each: lemon juice, chopped parsley and snipped chives
- 1 tsp. dill weed
- 2 dashes (1/16 tsp.) cayenne pepper
- 1 lb. orange roughy
- salt
Directions

1Melt butter.

2Stir in lemon juice, parsley, chives, dill and cayenne pepper.

3Lay fish in single layer in 9-inch square pan. Pour batter mixture over fish.

4Bake uncovered at 400° for 8 to 10 minutes.

5Take out and keep warm.

6Boil juices over high heat until about 1/4 cup is left.

7Pour over fish.
