- frozen orange roughy (available at Price Club)
- 1/2 c. Marsala cooking wine
- lemon pepper
- salt
- olive oil (approximately 1 Tbsp.)
Directions

1In large skillet, pour a small amount of olive oil and heat. Sprinkle orange roughy with salt and lemon pepper.

2Place in skillet.

3As fish melts, pour off liquid and discard.

4Turn fish over; sprinkle again with lemon pepper and salt.

5Pour wine over and cook until wine disappears.

6Turn fish to brown on both sides (approximately 10 minutes).
