Orange Roughy Marsala

  • frozen orange roughy (available at Price Club)
  • 1/2 c. Marsala cooking wine
  • lemon pepper
  • salt
  • olive oil (approximately 1 Tbsp.)

Directions

    In large skillet, pour a small amount of olive oil and heat. Sprinkle orange roughy with salt and lemon pepper.

    Place in skillet.

    As fish melts, pour off liquid and discard.

    Turn fish over; sprinkle again with lemon pepper and salt.

    Pour wine over and cook until wine disappears.

    Turn fish to brown on both sides (approximately 10 minutes).
