- 4 eggs, separated
- 1 c. sugar
- pinch of salt
- 1 c. sifted cake flour
- juice and rind of 1 orange, grated
- 1/4 tsp. cream of tartar
Directions

1Beat egg yolks until light and fluffy.

2Gradually add sugar, salt, flour, juice and rind.

3Beat egg whites with cream of tartar until very stiff.

4Fold into first mixture.

5Bake in ungreased tube pan at 325° for 1 hour.

6When removed from oven, invert pan on bottle to cool.
