- 8 assorted apples
- 1 tablespoon fresh lemon juice
- 1 cup apple cider
- 12 cup sugar
- 1 cinnamon stick
- 2 tablespoons apple brandy (optional) or 2 tablespoons pear brandy (optional)
Directions

1Peel and core apples; cut into big chunks.

2Place in a medium saucepan and toss with lemon juice.

3Add cider, sugar, and cinnamon; bring to a boil.

4Reduce to a simmer and cook until tender, about 15 minutes.

5Let cool 20 minutes.

6Discard cinnamon.

7Mash to the consistency you prefer.

8Stir in brandy.

9Cool to room temperature; then cover and refrigerate.
