  • 1 1/2 lb. ground beef
  • 1 c. chopped onions
  • 1 clove garlic, minced
  • 1 tsp. vegetable oil
  • 2 c. sliced celery
  • 1/4 c. whole almonds
  • 2 c. cooked rice
  • 2 Tbsp. soy sauce
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. Cheddar cheese
  • 1 (10 1/2 oz.) can condensed mushroom soup
  • 1 (16 oz.) can mixed vegetables, drained

Directions

    Brown meat, onions and garlic in oil.

    Add celery, soup and mixed vegetables.

    Stir in rice and seasonings.

    Turn into 2 1/2-quart casserole.

    Cover and bake 25 minutes at 350°.

    Remove cover and top with cheese and almonds.

    Return to oven for 5 minutes or until cheese melts.
