Ingredients
- 2 pkg. chicken fillets, cut up
- 2 Tbsp. oil
- 1 large onion, sliced
- 1 large green pepper, sliced
- 1 head broccoli, cut up
- 4 large carrots, sliced
- 2 cans water chestnuts
- 1 or 2 cans Chinese vegetables, drained
- dash of garlic
- 1/2 c. soy sauce
- 2 Tbsp. cornstarch (heaping)
Directions

1Brown chicken in oil; remove.

2Add onion and pepper to oil; stir-fry for one minute.

3Return chicken to pan.

4Add broccoli, carrots, water chestnuts and Chinese vegetables.

5Cover and let simmer until vegetables are tender, but not mushy.

6Add dash of garlic.

7Mix soy sauce and cornstarch; add to vegetable mixture and stir to coat vegetables.

8Serve over rice or Chinese noodles. Serves 6.
