- 1 1/2 lb. small zucchini squash, cubed
- 1 large onion, finely chopped
- 6 Tbsp. (3/4 cube) butter
- 1 c. grated sharp Cheddar cheese
- 1 tsp. Accent
- 1 tsp. salt
- pinch of pepper
- 2 eggs, beaten
- 2 Tbsp. butter, melted
- 1 1/2 c. soft bread crumbs
Directions

1Saute onion in 6 tablespoons butter until golden.

2Cut squash into cubes and add to onion.

3Stir in cheese, Accent, salt and pepper.

4Cool slightly.

5Mix vegetables lightly with beaten eggs; spoon into shallow buttered baking dish.

6Toss remaining 2 tablespoons of melted butter with bread crumbs and sprinkle over top of zucchini mixture.

7Bake at 350° for 30 to 35 minutes or until knife inserted in center comes out clean.

8Serves 6 to 8.
