Ingredients

  • 2 whole chicken breasts
  • 2 Tbsp. vegetable oil
  • 1 medium green pepper, cut in strips
  • 1 small onion, sliced thin
  • 1 (5 oz.) can sliced water chestnuts, drained
  • 1/2 c. water
  • 1 c. sliced celery
  • 1 tsp. salt
  • 1/2 tsp. ground ginger
  • 4 Tbsp. cornstarch
  • 2 Tbsp. soy sauce
  • 1 (16 oz.) can bean sprouts
  • 1 (3 oz.) can chow mein noodles

Directions

    Cut chicken into thin strips.

    Heat oil in a large skillet. Add chicken and cook over moderate heat until meat turns white (approximately 5 minutes).

    Add pepper, onion, celery, chestnuts, water, salt and ginger.

    Cover and cook for 5 minutes.

    Blend cornstarch and soy sauce together.

    Stir into chicken.

    Add bean sprouts and cook about 2 minutes or until thickened.

    Stir often. Serves 4.
