- 1/4 c. vegetable oil
- 8 to 10 green onions, chopped
- 1 large bell pepper, sliced
- 1 c. carrots, thinly sliced
- 4 boneless, skinless breasts
- 2 c. water or chicken broth
- 1 large stalk broccoli (use flowerets)
- 2 c. fresh mushrooms, sliced
- 2 pkg. chicken flavor Ramen noodles
- soy sauce to taste
- 3 Tbsp. cornstarch, mixed with 1 c. cold water
Directions

1In hot skillet or wok, saute onions, carrots and bell pepper in vegetable oil until turning soft.

2If using a wok with a holding shelf, move vegetables up on shelf and use remaining oil to stir-fry chicken.
