- 4 scallions, cut in 1-inch pieces
- 2 tsp. margarine
- 1 lb. scallops
- 1 tsp. grated orange rind
- 1 Tbsp. grated ginger root
- 1 Tbsp. teriyaki sauce
- 1/8 tsp. pepper
- 1/2 c. water
- 1 Tbsp. cornstarch
Directions

1Place onions and margarine in a 9 x 9-inch Pyrex dish. Microwave, uncovered, at High for 2 minutes or until margarine is melted.

2Stir in scallops, orange rind, ginger root, teriyaki sauce and pepper.

3Cover with plastic or wax paper.

4Microwave on High for 3 minutes or until scallops are opaque.

5Remove scallops and onions with slotted spoon, reserving liquid.
