  • 8 oz package Orzo, prepared-cook al dente, drain
  • 2 ripe mangos, cut in 1/2 in. cubes
  • 1 small red onion, diced
  • 1 med. cucumber, peeled, diced
  • 1 T fresh Basil, chopped
  • *Mixed Greens (mesclun)
  • *Fresh Mint
  • Dressing:
  • 1 T Dijon mustard
  • 1 t. minced garlic
  • 1 T. honey
  • 1/2 c. Balsamic Vinegar
  • 2 T Extra Virgin Olive Oil
  • Salt & Pepper to taste
