  • 1 box orzo pasta or Mexican Rice
  • 1 med. onion, minced
  • 2 cloves garlic, minced or 2 Tbsp. from jar
  • 1 bell pepper, minced
  • 2 cubes beef bouillon
  • 1 bundle fresh spinach, stem removed
  • 4 Tbsp. olive oil
  • Optional- dried crushed chilies

Directions

    Prepare pasta or rice according to directions on box.

    While pasta or is on simmer, pour olive oil into skillet.

    Saute on medium heat:

    onions, garlic, peppers, and bouillon cubes. Stirring several times.

    When bouillon cubes has dissolved, add pasta or rice and mix.

    Add spinach to mixture and saute until bright green.
