Orzo Summer Salad

Ingredients

  • 1 lb orzo pasta
  • 1 12 cups spicy hot V8
  • 2 teaspoons freshly grated lemon peel
  • 13 cup lemon juice
  • 13 cup olive oil
  • 1 tablespoon garlic, chopped
  • 34 teaspoon salt
  • 34 teaspoon pepper
  • 1 12 lbs tomatoes, chopped
  • 1 large English cucumber, chopped
  • 1 bunch green onion, chopped

Directions

    Cook orzo as directed on box.

    Drain well.

    Place in a large bowl and mix the rest of the ingredients together and toss gently to mix.

    Cover and refrigerate.

    Note: I add a little more lemon and garlic.
