- 6 (3/4 to 1 lb. size) veal shanks
- 1/3 c. flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. olive or salad oil
- 1 c. coarsely chopped onion
- 1 c. sliced pared carrot
- 1 clove garlic, crushed
- 1 (8 oz.) can tomato sauce
- 1 c. dry white wine
- 1 tsp. dried basil leaves
- 1/2 tsp. dried thyme leaves
- 1 bay leaf
- 1/4 c. finely chopped celery
- 2 Tbsp. chopped parsley
- 1 tsp. grated lemon peel
Directions

1Wipe the veal shanks with damp towels.

2Combine the flour, salt and pepper.

3Rub into veal shanks, coating them well on all sides.

4Slowly heat oil in Dutch oven.

5Add veal shanks, 3 at a time, and brown well on all sides, 30 minutes in all.

6Remove as browned.
