• 4 medium potatoes, cut into 1 inch chunks
• 6 medium carrots, cut into 1/2 inch chunks
• 1 medium onion, chopped
• 2 cups tomato juice
• 1 cup water
• 3 Tbsp. quick-cooking tapioca
• 1 tsp. sugar
• 2 tsp. salt
• 1/2 tsp. black pepper
