- approximately 3 1/2 lb. chicken
- 5 Tbsp. butter
- 1/4 c. flour
- 2 tsp. dry mustard
- 1 tsp. paprika
- 1/2 tsp. pepper
- 1 1/2 tsp. salt
Directions

1Select a pan large enough to hold the chicken without overlapping.

2Melt 3 tablespoons butter.

3Mix the flour, mustard, paprika, pepper and salt in a paper bag.

4Shake the chicken pieces in it one at a time.

5Lay the floured chicken in the pan; turn in the butter once.

6Dot with small pieces of butter.

7Bake in a moderate oven at 350° for 35 minutes for small chickens or 45 minutes for large.

8Turn once during this time.

9Turn the oven to a very hot 450° and bake 10 to 15 minutes more, until chicken is brown and bubbly.
