Oven-Fried Chicken

- 2 c. cornflakes or 1/2 c. fine dry bread crumbs
- 1/4 c. butter or margarine
- 1/4 tsp. pepper
- 1 (2 1/2 to 3 lb.) broiler fryer chicken, cut up
- 1/2 tsp. salt
Directions

1Crush cornflakes to make 1 cup crumbs.

2Set aside.

3In small saucepan, melt butter or margarine.

4Remove from heat.

5Stir in salt and pepper.

6Rinse chicken pieces.

7Pat dry.

8Brush with butter mixture.

9Place crushed cornflakes or fine dry bread crumbs on a sheet of waxed paper.

10Roll chicken in crumbs to coat. Arrange chicken skin side up and so pieces don't touch in a shallow baking pan.

11Bake in a 375° oven for 50 to 60 minutes.

12Do not turn.

13Chicken is done when it is easily pierced with a fork. Season to taste.
