  • 1 whole fryer, cut up
  • 3/4 c. buttermilk
  • 1 1/2 c. flour
  • 3 tsp. salt
  • 1/2 tsp. pepper
  • 2 tsp. paprika
  • dash of cayenne
  • 3 tsp. dried minced onions
  • 1 stick butter or oleo

Directions

    Mix flour, salt, pepper, paprika, cayenne and onions together. Dip chicken pieces in buttermilk and then into flour mixture. Melt butter in shallow baking pan in a 400° oven.

    Place chicken pieces in pan, turning to coat in butter (skin side down in single layer). Bake at 400° for 30 minutes. Turn chicken and bake 30 minutes longer or until tender.
