- 3 broiler fryers, cut up (about 2 1/2 lb. each)
- 1/2 c. butter or margarine
- 1 envelope Italian salad dressing (Good Seasons)
- 4 c. Hungry Jack instant potato flakes, not prepared
Directions

1Trim excess fat from chicken and twist the tip of the chicken wing under.

2Melt butter or margarine in a large skillet.

3Remove from heat.

4Stir in Italian salad dressing mix.

5Roll each piece of chicken first in butter mixture, then in potato flakes on wax paper.

6Arrange in a single layer on several aluminum foil lined 15 x 10 x 1-inch jelly roll pans.

7Bake in 375° oven for 40 minutes or until golden brown.

8Serve hot or at room temperature.
