- 3 c. cornflakes, crushed fine or 1/2 c. fine dry bread crumbs
- 1 tsp. Italian seasoning or 1/2 tsp. thyme or sage
- 1 (2 1/2 to 3 lb.) fryer chicken, cut up
- 1/4 c. margarine or 1/2 c. buttermilk or 1/2 c. low-fat yogurt
Directions

1Rinse chicken and pat dry.

2You may sprinkle with salt and pepper, if desired.

3Place crumbs and seasoning in a plastic bag and shake to mix.

4Brush or dip each piece of chicken in margarine or milk.

5Place in a bag and shake to coat.

6Bake in a 375° oven for 45 to 55 minutes or until tender and no longer pink.

7If browning too rapidly, you may place aluminum foil loosely over top.

8Serves 6.
