Oven-Fried Eggplant

  • 1/2 c. nonfat mayonnaise
  • 1 Tbsp. minced onion
  • 12 (1/2-inch) slices unpeeled eggplant (about 1 lb.)
  • 1/3 c. fine dry bread crumbs
  • 1/3 c. grated Parmesan cheese
  • 1/2 tsp. dried Italian seasoning

Directions

    Combine first 2 ingredients. Stir well. Spread evenly over both sides of eggplant slices.

    Combine bread crumbs, cheese and Italian seasoning in a shallow bowl. Dredge eggplant in bread crumb mixture.

    Place eggplant on a baking sheet sprayed with vegetable cooking spray.

    Bake at 425° for 12 minutes. Turn eggplant over and bake 12 minutes or until golden. Serves 4.
