Oven-Fried Eggplant

- 1/2 c. nonfat mayonnaise
- 1 Tbsp. minced onion
- 12 (1/2-inch) slices unpeeled eggplant (about 1 lb.)
- 1/3 c. fine dry bread crumbs
- 1/3 c. grated Parmesan cheese
- 1/2 tsp. dried Italian seasoning
Directions

1Combine first 2 ingredients. Stir well. Spread evenly over both sides of eggplant slices.

2Combine bread crumbs, cheese and Italian seasoning in a shallow bowl. Dredge eggplant in bread crumb mixture.

3Place eggplant on a baking sheet sprayed with vegetable cooking spray.

4Bake at 425° for 12 minutes. Turn eggplant over and bake 12 minutes or until golden. Serves 4.
