- 4 large potatoes
- 2 tsp. thyme
- 2 Tbsp. oil
- salt and pepper
Directions

1Heat oven to 425°.

2Cut potatoes lengthwise into thick slices (leave peel on potatoes), then into 1/2 inch by 1/2 inch thick strips.

3Toss potatoes with oil, spread on a baking sheet. Sprinkle with thyme.

4Bake 35 to 40 minutes, turning every 10 minutes, until potatoes are brown and crisp.

5Remove from oven and sprinkle with salt and pepper.
