Ingredients
- 1 lb. potatoes, cooked, peeled and sliced (approximately 3 c.)
- 6 slices bacon, cooked and crumbled (reserving 3 Tbsp. drippings)
- 2 Tbsp. chopped onion
- 1/4 c. sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. dry mustard
- 1 tsp. salt
- 1/2 c. water
- 1/4 c. lemon juice
- 1/4 c. cider vinegar
- 1/4 c. chopped celery
Directions

1In 2-quart shallow baking dish, combine potatoes, bacon and onion; set aside.

2In small saucepan, combine sugar, cornstarch, mustard and salt.

3Gradually add reserved drippings, water, lemon juice and vinegar.

4Mix well.

5Over medium heat, cook and stir until thickened.

6Pour over potatoes.

7Let stand several hours to blend flavors; stir in celery.

8Bake at 350° for 30 minutes or until hot.
