- 1/2 lb. bacon, coarsely chopped
- 4 green onions, sliced
- 1/2 lb. mushrooms, sliced
- 3 Tbsp. green pepper, chopped
- 8 eggs
- 1 c. milk
- 1/2 tsp. salt
- 2 1/2 c. shredded Monterey Jack cheese
- 1 c. shredded Cheddar cheese
Directions

1Fry bacon until brown; drain. Saute onions, mushrooms and green pepper. Beat eggs with milk and salt. Stir in bacon, onion, mushrooms, green pepper, 2 cups Monterey Jack and 1/2 cup Cheddar cheese. Pour in greased 2-quart baking dish. Can be covered at this point and refrigerated overnight, if desired. Bake, uncovered, at 350° for 35 to 40 minutes, until set and lightly browned. When almost done, sprinkle with remaining cheese. If you choose to refrigerate, allow extra time for baking.
