- 1 large fryer (3 1/2 to 4 lb.)
- 1 tsp. dried parsley flakes
- 3/4 tsp. dried whole thyme
- 1/4 tsp. rubbed sage
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- vegetable oil
Directions

1Remove giblets and neck from chicken and reserve for other uses.

2Rinse chicken with cold water.

3Pat dry.

4Combine herbs and seasonings and rub on surface and in cavity of chicken.

5Lift wing tips up and over back so that they are tucked under chicken securely.

6Place chicken breast side up in a shallow roasting pan. Cover and refrigerate overnight.

7Brush chicken with oil and bake at 325° for 2 1/2 hours or until done.

8Chicken is done when legs move freely.

9Let stand 20 minutes before cutting.
